Objective:
The goal of this project is to determine if the quality or safety of agricultural products can be assessed with hyperspectral microscope imaging. The specific objectives are to 1) evaluate the optical properties of the primary physical and chemical components that negatively impact the quality or safety of agricultural products; 2) analyze the spectral features from 1 with hyperspectral microscope imaging; and 3) develop chemometric models for screening those agricultural products for diminished quality or safety.

Approach:
To fulfill the above-mentioned objectives, we will develop methodologies to test and validate the visible and near-infrared hyperspectral microscope imaging techniques. A series of experiments will be conducted based on the following procedures; 1) identify and select target components that are indicative of deteriorated quality or safety of agricultural products; 2) analyze the spectral features of the selected components with hyperspectral microscope imaging; 3) develop chemometric models to differentiate normal products from those with diminished quality or safety attributes; 4) develop algorithms for early detection and classification of agricultural products including poultry meat.
