Objective:
Test the glycemic response of whole beans vs. foods made with bean flours.

Approach:
Will develop bean pasta from the top four to six formulations and will determine the nutrient composition. The glycemic index values of these plus two controls will be determined using a standardized methodology in 15 normoglycemic adults who do not have diabetes or other chronic disease conditions and in a second study with 30 adults after consuming six bean pasta prototypes, two control pastas, and two controls of glucose.
