Evaluate human flavor/aroma discrimination in whole wheat samples found to be significantly different by mice. These whole wheat samples have undergone genetic analyses and have been associated with mouse flavor perception and the researchers will perform similar associations with human flavor perception.
Whole wheat wafers will be made at the WWQL and sent to the Genetics of Taste (GoT) lab. GoT will administer a triangle sensory test to approximately 1500 people. Results will be sent to the WWQL for analysis. Buccal swabs will be taken from each participant and the extracted DNA will be sent to WWQL for analysis.
