Objective:
To assess dietary fiber on common bean seeds of the Yellow Bean Collection.

Approach:
Integrated total dietary fiber will be measured on 100 Yellow Bean Collection genotypes lines per year from the 2017 and 2018 field seasons. The method will be an adaptation of the AOAC 2011.25 Codex method. The assay involves enzymatic digestion with alpha amylase and amyloglucosidase, two separate gravimetric filtrations for insoluble/soluble dietary fiber determinations, as well as high-performance liquid chromatography (HPLC) to quantify oligosaccharide concentrations. The fiber analysis is very expensive and time consuming, so we will only select 100 genotypes per year. These genotypes will be selected based on variability for cooking times and flavor/texture variability.
