Objective:
To update and expand high quality analytical nutrient data for processed eggs – dried and frozen forms of whole, yolks, and whites -- Food Composition Databases (ARS Foods)

Approach:
This project will support sampling of processed eggs—dried and frozen forms of whole, yolks, and whites – from leading egg processors using National Food and Nutrient Analysis Program’s standardized procedures for sample handling and nutrient analysis. Approaches to be used include – prepare sample aliquots received from leading national egg processors for labs; ship sample aliquots and quality control material to commercial lab; receive, review and check laboratory data using established quality control procedures; add the approved data to the ARS Food Data System (ARS Foods), the successor to the USDA National Nutrient Database for Standard Reference (SR).
