Objective:
To conduct research on micronutrient bioavailability of staple food crops and food products, and utilize this information to improve the nutritional quality of the targeted food.

Approach:
Quantitative analysis of minerals, select phytochemicals and nutrients will also be conducted using inductively coupled plasma emission spectroscopy, liquid chromatography and mass spectroscopy.
