To characterize fast cooking dry bean germplasm for nutritional properties.
A set of fast cooking bean genotypes, previously identified through phenotypic screening of a diversity panel will be characterized for starch composition and protein digestibility. These components will also be measured in slower cooking germplasm within the same seed types. Studies will be conducted to determine if the differences are intrinsic to the seed or induced by the different cooking times.
