Objective:
Establishing a Non-Funded Cooperative Agreement with the National Center for Food Safety Education and Research, National Taiwan University, Taiwan, to assist in experimental design, data analysis, and model development for the growth of Staphylococcus aureus, Salmonella spp., and pathogenic Escherichia coli in ready-to-eat (RTE) food.
Approach:
Collect baseline data for the prevalence and contamination levels of Staphylococcus aureus, Salmonella spp., and pathogenic Escherichia coli in ready-to-eat food in Taiwan, perform laboratory experiments to develop predictive models, and develop a microbial risk assessment for the RTE food.
