To study biotransformation of grain processing by-products, such as rice, wheat bran, barley or distillers grains, by using microorganisms or enzymes to transform these by-products into value-added products and the effect of such products on animal health (including trout health).

The Center for Food Safety in UA (CFS-UA) is dedicated to the development and utilization of advanced research technologies and to the communication of research findings to assist in building public confidence in the protection, safety, quality and nutritional value of food products. This group works on food biochemistry and food microbiology, and is now researching on converting grain processing by-products into value-added ingredients/additive for animal product systems. The USDA-ARS’s National Small Grains and Potato Germplasm Research Unit (USDA-ARS) are dedicated to research to enhance small grains and potato production and improve rainbow trout production efficiency by developing plant-based diets. The Grain Chemistry and Utilization Laboratory conducts research on chemistry, processing, and utilization of grains, oilseeds, and biofuel co-products (such as distillers grains), and works with fish scientists to explore using plant-based materials for fish feed and other value added utilization. USDA-ARS Scientist will provide some grain processing by-products to a scientist at CFS-UA, who will work with his colleagues and collaborators to ferment the by-products by selecting and developing suitable microorganism and optimizing fermentation conditions. USDA-ARS will then help analyze chemical composition of the fermented products, determine suitability as fish feed ingredients/additive, and then coordinate work with colleagues in using the selected products for trout feeding studies.
