The objective is to develop mathematical models that can be used to predict the microbiological safety and shelf life of raw fish products during processing and distribution. The models will assist producers of raw fish products in designing the unit operations involving in producing raw fish products, such as processing, handling and storage, to enhance the products’ microbiological safety and quality.
Laboratory experiments on the growth of pathogenic (Vibrio parahaemolyticus) and spoilage microorganisms on chilled grouper fillets at different storage temperatures will be conducted in the Cooperator’s laboratory. The ARS scientist and the Cooperator will jointly design the experiments, analyze data and develop growth models for applications in biochemical or electronic time-temperature-indicator (TTI) formats.
