Research Project: Development of a Freeze-Dried Cherry Placebo

Location: Healthy Processed Foods Research

Project Number: 2030-41430-011-04-T
Project Type: Trust Fund Cooperative Agreement

Start Date: Apr 1, 2013
End Date: Mar 31, 2015

FY13-Production of a cherry powder from pitted cherries that can be used as an alternative to fresh cherries in scientific studies, and potentially become a new avenue for utilizing as a commercial product. FY14-We propose to develop a freeze-dried placebo cherry powder for testing in human trials against actual Bing cherry powder.

FY13-The production of a cherry powder from pitted cherries will be contracted out to a commercial manufacturer. To determine the effect of the processing method on the concentrations of potential health promoting compounds (e.g., anti-oxidants, phenolics, and anthocyanins) we will conduct anti-oxidant, total soluble phenolic, total anthocyanin analyses on a samples of the pitted cherries and cherry powder. FY14-Several formulations will be prepared in liquid form and then freeze-dried using our Virtis freeze drier. We will perform sensory and other analyses as needed to verify the quality of the placebo. Information regarding processing parameters necessary to scale up production of the placebo to commercial level will be shared.
