The objective of the Food Yield Studies project is to test and provide yield data in a manner typical to a school foodservice setting for a variety of high priority food items with the assistance of collaborators. The yield data obtained through this study will be used to update, verify and add new yields to the current Food Buying Guide for Child Nutrition Programs.
The project entails the following: develop a detailed list of intended food purchases that will be used to conduct yield studies and a project protocol which shall include a list of intended food purchases, a detailed description of proposed equipment, and the preparation methods that will be employed for each food type. ARS will provide a proposed work plan (timeline) that outlines monthly completion of yield studies, conduct laboratory research to determine yields on the food items indicated, develop the data sheets, document yields, weights, and additional information, and submit analyzed yield results as the data become available.
