Understanding the Representation of Pulses in the Diet of American Non- Vegetarian Consumers
Why are we doing this study?
The goal for this study is to determine how Americans use beans, peas, and lentils (also called pulses) as part of a meal. We will investigate food choices when getting a meal or dish ready that is made of more than two foods. Secondly, we will determine how Americans feels about eating pulses.
Who is eligible for this study?
- A U.S. citizen who is at least 18 years of age
- Cook meals at home at least 3 times a week
- Have not been diagnosed with any significant health conditions
- Not planning to or currently attempting to gain or lose weight
- Not a vegetarian or a very selective eater
What is required of me for this study?
Participants will view images of different types of foods that are typically used to create meals. The food images represent protein, vegetables, starchy foods, pulses. Protein foods include images of beef, pork, chicken, and salmon. Starchy foods include images of rice, potatoes, pasta, and bread. Vegetables include images of carrots, green beans, tomatoes, and corn. Pulses include images of chickpeas, kidney beans, pinto beans, and lentils.
Using these foods, you will create a meal based on 6 different real-life situational scenarios:
1) An everyday meal prepared at home.
2) A meal prepared for a vegetarian friend.
3) A meal prepared on a strict budget.
4) A meal selected at a self-service cafeteria.
5) A meal prepared by for them by a chef.
6) A meal prepared for a special guest.
For each scenario you will create a meal that uses 3 foods, but you can use only one food item from a group. You will then be asked to create another meal without using the same combination of images. This will continue until five meals have been created for each scenario.
You will also complete questionnaires asking to rate how hungry you feel and how you feel about eating pulses.
Will I get compensated for my time?
The participant will be paid $50 for completing this research study.
