Two stage lipase-catalyzed preparation of fractions enriched in specific, heat sensitive fatty acids

Preparation of heat sensitive fatty acids from vegetable oils (e.g. erucic acid, C22:1 from rapeseed oil) presents problems during normal steam splitting and fractional separation of the desired fatty acid from the resulting mix. A two stage lipase-catalyzed process has been developed that uses a random lipase to completely hydrolyze the oil followed by a lipase that selects against the desired fatty acid in the mix to catalyze ester formation. After the latter reaction has progressed part way, the unreacted fatty acid fraction will be enriched in the desired fatty acid and no losses to thermal degradation will have taken place.
