ARS Food and Nutrition Research Briefs Issued

By Kim Kaplan
January 12, 2010

Mild dehydration appears to affect people's mood as well as their motor skills. That's one of the latest nutrition and health findings in the newest issue of the Agricultural Research Service's Food and Nutrition Research Briefs (FNRB) and its Spanish-language edition (Informe de investigaciones de alimentos y nutrición).

The popular online newsletter reports discoveries from researchers at ARS laboratories nationwide.

Among other findings, the current issue reports that:

  • A fungus may help solve the problem of a grapefruit compound that interacts negatively with certain prescription drugs.
  • The ARS nutrient database has been updated with more than 200 new food entries and as many as 3,000 values for Vitamin D. The update also includes a new food group, "Restaurant Foods."
  • Increasing the roasting intensity ramps up the antioxidant capacities of peanuts, peanut flour and peanut skins.

The FNRB is offered with color photos and illustrations on the web. And by clicking the "subscribe" link on the newsletter's home page, readers can sign up for two e-mail options: They can receive the full text of the newsletter by e-mail, or simply an advisory that a new issue has been posted to the Web.

ARS is the U.S. Department of Agriculture's principal intramural scientific research agency.
