Title: PEROXIDASE-CATALYZED CROSSLINKED CASEINATE FILMS

Technical Abstract: A peroxidase catalyzed crosslinking reaction was investigated for the construction of composite films consisting of sodium caseinate and acetylated monoglyceride. Maximum crosslinking in film-forming solution was obtained in a reaction mixture of sodium caseinate, acetylated monoglyceride, horseradish peroxidase (2.37 U/mg caseinate) and 23 mM H202 incubated at 37 degree C for 26 hr. Increasing the enzyme concentration, or the reaction time did not change the extent of crosslinking. Film solubility decreased significantly with incubation time and enzyme concentration, and hence with increased crosslinked polymers. Only films characterized by 100% loss of uncrosslinked proteins showed a decrease in water vapor transmission compared with the less crosslinked films.
