Technical Abstract: Many interesting and exciting developments have occurred in the field of food irradiation since the publication of the first edition of Food Irradiation: Research and Technology in 2006. The 2nd edition of the book reviews our latest knowledge on food irradiation, highlights the current developments in irradiation regulation, research and application. New chapters on irradiation chemistry including furan formation due to irradiation, irradiation of packaging materials, irradiation technologies, and ready-to-eat meat products have been added. Topics on safety and quality fresh fruits and vegetables, phytosanitary application and consumer acceptance have been expanded to address recent interest and development.
