Technical Abstract: Saponins are a biologically active class of triterpenoid phytochemicals found in soybeans at concentrations similar to those of the isoflavones, and the role they may play in nutrition and health is not well understood. Research the functionality of these compounds in animals and humans has been hampered by a large number of glycosidic forms making them difficult to analyze and purify. A number of reports in the literature have indicated that saponins are very active in cell culture bioassays, but little work has been done on whole animal studies. This presentation will summarize the work on soy saponins and present an overview of some of the future work that needs to be done to develop a better understanding of the role dietary soy saponins play in health and disease prevention.
