Interpretive Summary: The first major symposium on the byproducts of Alaskan seafood processing was organized by the Alaska Fisheries Development Foundation and the proceedings volume was prepared by the Alaska Sea Grant College Program in 1990. It had been twelve years since that first symposium when and a second symposium on byproduct advances was held in Anchorage in 2002. At that time fish from commercial aquaculture was coming on strong, especially in China and there were concerns about the availability of fish protein meals and oils. The Alaska Sea Grant College Program also produced the publication from the 2002 symposium. It has been another six plus years since the 2002 International Conference on Seafood Byproduct Opportunities symposium. Changes accompanying the exponential growth of aquaculture and the influence of the global fish markets available through the internet have substantially changed the character of fish processing and the handling of fish processing byproducts. Changes in global marketing of seafood had occurred and the focus of the Alaskan seafood industry had changed significantly. As a consequence, another symposium was held in 2009, this time trying to increase the participation of industry folks and there was a strong turn-out of the Alaskan Fishing Industry for this meeting. This proceedings is the product of that symposium, held February 25th and 26th of 2009 in Portland OR immediately after the Pacific Fisheries Technologists Annual meeting. Recognizing the interest in the variety of subject matter covered during the symposium, the proceedings from these presentations were put into another Symposium volume. The material has been put into plenary talks and four major sections: new products and use, stickwater and wash water, storing stabilizing and processing, and protein hydrolysates and oils.

Technical Abstract: This is the third proceedings from byproduct symposiums held in 1990, 2002 and 2009. The 2009 symposium was held in February 25th and 26th of 2009 in Portland OR immediately after the 2009 Pacific Fisheries Technologists Annual meeting. This was an international conference with 85 participants, including a very strong participation from the seafood industries, 29 presentations, as well as an industry forum and a poster session. Recognizing the interest in the variety of subject matter covered during the symposium this proceeding was put together and and published again by the Alaska Sea Grant Program. This proceeding has been divided into plenary talks and four major sections: new products and use, stickwater and wash water, storing stabilizing and processing, and protein hydrolysates and oils.
