Technical Abstract: The Alaska Pollock constitutes one of the largest commercial fish catch and generation of by-products in the world. Crude oil is one of the products generated from the by-products; however, quality loss is expected if time delay or temperature abuse is encountered before oil extraction. The objective of this study was to evaluate the quality of the extracted crude oil from raw Alaska Pollock by-products (heads and viscera) after being stored for 0, 1, 2, 3 and 4 days at 15 C and 0, 1, 2, 3, 4, 5, 6, 7, 8, 9, 10 at 6 C. Extracted oil samples were evaluated for free fatty acids (FFA), thiobarbituric acid reactive substances (TBARS), peroxide values (PV) and the content of vitamins E and retinol. As expected, FFA, TBARS and PV values initially increased with increasing storage time and temperature. Retinol levels increased with increased storage time to approximately four times the initial levels. During the same 10 day period vitamin E levels decreased with storage time. The results indicate a loss of vitamin E in the crude oil and an increase in retinol from precursors with storage time of the raw material.
