Interpretive Summary:

Technical Abstract: This chapter describes the yeast genus Citeromyces. The two known species have been isolated from high osmotic habitats such as sugar, condensed milk and wounds from tropical trees. Although the species are not common, one of them, Citeromyces matritensis does cause spoilage of foods.
