Technical Abstract: This book chapter describes species of the yeast genus Saturnispora. The genus has been defined from analysis of multiple gene sequences and includes seven species that form ascospores as well as two additional species in which ascospores have not yet been detected. The species are most often found in marshes and on trees, but one of the species, S. mendoncae, has been isolated from acidic foods. The chapter provides a detailed description of each species and methods for species identification. Those benefiting from this work include microbiologists, ecologists and food microbiology laboratories that rely on chapters, such as this one, for identification of yeast cultures. Molecular biologists also use these studies to understand the genetics of species relationships.
