Technical Abstract: Functional lipids include triacylglycerols (some contain health-promoting omega-3 fatty acids), phytosterols, tocopherols, tocotrienols, carotenoids, and related natural products. Until recently, thin layer chromatography was commonly used for their qualitative separation and gas chromatography (GC) and GC-mass spectrometry (GC-MS) were the only tools for the quantitative analysis of these important compounds. In recent years, HPLC, HPLC-MS, and MS-MS (the latter does not require chromatography and it is the basis for the new field of lipidomics) methods have become valuable tools for the qualitative and quantitative analysis of “functional lipids” in vegetable oils, nutraceuticals, functional foods, and conventional foods.
