Technical Abstract: Lecithin has rapidly become an important nutraceutical since it has been shown to be effective in preventing cardiovascular disease, improving liver function, enhancing memory, learning and reproductive health. This chapter reviews the manufacturing and chemical and physical properties of lecithin as well as health and nutritional benefits.
