Technical Abstract: Hydroxy fatty acid sophorosides are glycolipids (sophorolipids) that can be readily obtained from microbial fermentation of a wide range of bio-based feedstocks. We are pursuing chemical derivatization of these starting materials with the aim of tailoring their utility as surfactants or biocidal agents. Mass spectrometry is indispensable to this work since mixtures of isomers are frequently obtained, rendering NMR spectroscopy difficult at best. This presentation will discuss the use of LCMS in analyzing two major classes of derivatives: esters of the carbohydrate head group, particularly those formed from amino acid units, and amides of the carboxylic tail that can be dimerized to yield bolaform amphiphiles. Both APCI and ESI methods are used.
