Interpretive Summary:

Technical Abstract: Selenium (Se)- enriched foods may be an effective way of consuming the amount of Se proven to reduce cancer. Buckwheat is a Se-containing grain that also may be beneficial in controlling diabetes and hypercholesterolemia. A survey of buckwheat produced in the northern Great Plains found the average Se content to be 51.6 ug Se/100g. To determine the bioavailability of Se from a commercially available buckwheat bran product, Se depleted rats were fed diets consisting of a range of concentrations of Se (0.02 - 0.15 mg Se/kg diet) supplied as selenite, selenomethionine, and buckwheat bran. Based on blood Se status indicators, approximately 50% of the Se from buckwheat was bioavailable. Therefore, a single 100g serving of buckwheat will contribute approximately 26 ug of bioavailable Se to the diet, supplying a proportion of the Recommended Daily Allowance of 55 ug/day. Percent bioavailability and standard deviations determined by bioavailability curves generated by feeding selenite and selenomethionine: 5% bran 7.50% bran Selenite Plasma Se 53.63 (±4.44) 66.09 (±4.77) Blood Gpx 39.68 (±6.07) 46.29 (±11.46) Liver Gpx 12.09 (±2.08) 24.74 (±6.15) Liver TR 66.63 (±14.14) 60.32 (±13.07) SeMethionine Plasma Se 56.31(±4.66) 67.30 (±4.86) Blood Gpx 46.00 (±7.04) 53.33 (±13.20) Liver Gpx 13.08 (±2.25) 28.00 (±6.96) Liver TR 80.35 (±17.05) 68.35 (±14.81)
