Technical Abstract: Citrus fruits include oranges, mandarins, lemons, limes, grapefruit, and less well-known types. Citrus has been cultivated since ancient times in its area of origin in southeast Asia, and cultivation has spread around the world to all areas with suitable climates. Citrus is eaten fresh as well as being processed into juice and other products. Numerous health and nutritional benefits have been documented for citrus. This book chapter summarizes the biology, production, and consumption of citrus fruits for a general readership.
