Technical Abstract: The successful production of fermentable sugars from starch requires both the malting and mashing processes. In this conference report, we explain the function of both processes. We focus upon the physical changes that occur in starch, the synthesis and/or activation of carbohydrases, and the production of both fermentable and nonfermentable sugars. Limitations in this production system are documented and ways of ameliorating these limitations are described.
