Interpretive Summary:

Technical Abstract: Nu-Trim is a new beta-glucan-rich hydrocolloid for increasing textural qualities and health benefits of functional foods. It is prepared in high yields by a natural extraction process that removes coarse fiber components from milled oat and barley materials [oat bran (OB), oat flour (OF), barley flour (BF)]. When Nu-Trim OB, OF, or BF is used in combination with regular milled OB, OF, or BF, high levels of soluble beta-glucan foods are possible including baked goods with greater than 0.75 grams per serving portion. Nu-Trim OB, OF, or BF also produces soft and smooth textured low-fat and fat-free foods. Nu-Trim OB serves as a coconut cream or milk substitute in many Asian foods. Nu-Trim OB, OF, or BF finds uses in lactose-free, non-dairy foods, such as milk, cheese, ice cream. Co-processing Nu-Trim with Z-Trim, Oatrim, and soy materials provides many opportunities for increasing health benefits. Co-processed Nu-Trim OB with soy flour will be discussed.
