Title: New Hydroxy Fatty Acids from Unsaturated Fatty Acids by Biocatalysis

Technical Abstract: We are investigating bioconversions of unsaturated fatty acids to value-added products. One such product is hydroxy fatty acids. Four microbial systems have been identified and studied. (1) Production of 10-hydroxystearic acid from oleic acid by resting cell suspension of Nocardia cholesterolicum with 90% yield. (2) Production of 10 ketostearic acid from oleic acid by Flavobacterium sp. DS5 at 85% yield. This hydratase system also converts linoleic acid to 10-hydroxy-12(Z)-octadecenoic acid at 55% yield. Products from alpha & gamma-linolenic acids were identified as 10 hydroxy 12(Z),15(Z) and 10 hydroxy 6(Z),12(Z) octadecenoic acids, respectively. (3) Production of 7,10 dihydroxy 8(E) octadecenoic acid via 10-hydroxy-8-octadecenoic acid by Pseudomonas aeruginosa PR3 with greater than 60% yield. (4) Production of a new compound, 12,13,17 trihydroxy 9(Z) octadecenoic acid from lenoleic acid by Clavibacterium sp. ALA2. The structure of this compound resembles that of "plant defense substances" produced by plants.
