Technical Abstract: This book chapter provides comprehensive descriptions of the 9 species assigned to the yeast genus Zygosaccharomyces. Species of this genus are distributed worldwide. Several of the species are common spoilage microorganisms of salad dressings, catsup and other condiments causing millions of dollars in losses each year. In addition to the descriptions, this chapter describes laboratory methods for species identification.
