Interpretive Summary: This chapter is for a book that describes the classification and identification of yeasts. The data used in the descriptions of the 91 species accepted include growth reactions, microscopic appearance, and biochemical comparisons. Species assigned to Pichia are used for conversion of biomass to fuel alcohol, and production of single-cell protein and several industrially important biochemicals.

Technical Abstract: This chapter provides a taxonomic description of the genus Pichia, which is presently comprised of 91 species. Morphological, physiological, and molecular phylogenetic data are included for the species. The molecular data demonstrates Pichia to be polyphyletic.
