Interpretive Summary: The intent of this chapter is to provide the undergraduate student and the producer with some background and information on the methods of estimating forage nutritive value and quality. Information is provided on the way animal's select their diet and digest the forage. Methods are described to estimate nutritive value based on chemical analyses and using bioassays. The aspect of dry matter intake, as a component of forage quality, is described as well as factors which limit it. Consideration is given to the grazing animal and the dynamics that occur in the plant-animal interface.
