Interpretive Summary: We determined the phytochemicals in brans of 32 red and purple rice varieties from around the world. The description of the country of origin and the physical traits of the whole grain (color, length, width, thickness, and kernel weight) of this genetic collection are provided along with phytochemical data, such as red pigmented compounds, tannins. Studies have indicated that people that consume tannin-rich foods have lower incidence of inflammatory disease and metabolic syndrome. The information provided here can be used by the breeding community and rice producers interested in producing specialty rice varieties.

Technical Abstract: Phytochemicals in red and purple bran rice have potential health benefit to humans. We determined the phytochemicals in brans of 32 red and purple global rice varieties. The description of the origin and physical traits of the whole grain (color, length, width, thickness and 100-kernel weight) of this germplasm collection are provided along with data of total flavonoid and total phenolic contents, oxygen radical absorbance capacity and total proanthocyanidin contents. The contents and proportions of individual oligomers, from degree of polymerization of monomer to 14-mers, and polymers in bran of these 32 rice varieties are presented. The wide range of the chemical traits found in this set of dark pigmented bran rice and the description of whole grain physical traits will allow the breeding community and rice markets interested in specialty rice production to fully utilize information reported here.
