Technical Abstract: Hyperspectral imaging technology has emerged as a powerful tool for quality and safety inspection of food and agricultural products and in precision agriculture over the past decade. Image analysis is a critical step in implementing hyperspectral imaging technology; it is aimed to improve the quality of a digital image and to characterize and quantify its content or features in order to meet the specific application requirements. Image analysis relies on mathematical and statistical methods to obtain quantitative or categorical measurements of objects in the image, so that subsequent actions, such as sorting products into different quality grades, can be taken. This chapter covers the basic concepts and characteristics of digital images, and describes fundamental steps for image processing and enhancement. It then presents typical image analysis methods and techniques, along with application examples in food quality assessment.
