Interpretive Summary: Nutritional status can affect many aspects of immunity, and thus host resistance to infectious disease, or susceptibility to development of chronic disease. In this chapter the authors describe the basic organization and functions of the innate and adaptive immune system. In addition, the effects of specific nutrients on immunity are described, including vitamin A, C, D, E, iron, zinc and fatty acids.
