Interpretive Summary: Hyperspectral imaging collects and processes information as a set of images which represent a range of the electromagnetic spectrum from the ultraviolet to infrared in both spatial and spectral domain. These images form a three dimensional hypercube for processing and analysis. A hyperspectral imaging is capable of detecting contaminants on agricultural and food products. In this article, hyperspectral imaging technology is briefly described along with the basic principles of hyperspectral imaging system. The majority of the article deals with the applications of hyperspectral imaging for contaminant detection on agricultural and food products including hypercube date acquisition, key wavelength selection, calibration, and fundamental hyperspectral image processing including band ratio, masking, thresholding and classification.
