Interpretive Summary: In this research, we determined that a modified Cyclodextrin (CD) could attach to a variety of substances. This has potential food safety, healthy food, and environmental industry applications. Cyclodextrins are well known materials which are produced enzymatically from starch. We developed a method to modify the CD molecule by a novel reaction called Click reaction. The Click reaction allowed us to prepare and characterize a new derivative of CD. Our modified CD has a potential to be used for detection of mycotoxin for food safety application, removal of cholesterol in food industry, and removal of toxic substances from the environment.

Technical Abstract: A new derivative of ß-cyclodextrin (CD) has been made incorporating the phenyl group through the use of click reaction. The resulting product exhibits a self-association phenomenon through the formation of inclusion compound between the phenyl group and CD. The product has been characterized by 1H and 13C NMR spectroscopy.
