Interpretive Summary: A shrinking export market resulting from one time importers now being major exporters of high quality rice, and declining worldwide per capita consumption resulting from diet diversification, have presented the rice industry in the United States challenges and opportunities to develop new markets for rice. Value-added rice products that capture the unique nutritional and functional attributes of rice, offer a means to keep rice as a mainstay of the diet and expand domestic and export markets. This paper highlights research being conducted at the USDA-ARS Rice Research Unit (Beaumont, Texas) directed at developing cultivars with improved cooking, processing, storage, and health-beneficial properties, and that being conducted at the USDA-ARS Southern Regional Research Center (New Orleans, Louisiana) for value-added rice processes and products.

Technical Abstract: A shrinking export market, due to one time importers now being exporters of high quality rice, and declining worldwide per-capita consumption resulting from diet diversification, have hit the rice industry in the United States with challenges and opportunities to develop new markets for rice. Value-added rice products that capture the unique nutritional and functional attributes of rice, offer a means to keep rice as a mainstay of the diet and expand domestic and export markets.
