Technical Abstract: PSR23, a semi-domesticated, high-capric acid Cuphea hybrid, is being developed as a potential commercial alternative source of medium chain fatty acids. This study evaluated the effects of initial seed moisture and final moisture of cooked flaked seeds (CFS) on press performance and oil quality. Seeds with 9 and 12% initial moisture contents were flaked and cooked at different residence times to produce CFS with moisture contents ranging from 3.0 to 5.5%. CFS were pressed using a heavy duty laboratory screw press. Eighty and 84% oil were extracted from CFS with 5.5% and 3.0% MC, respectively. The amount of foots in the oil increased from 3% to 6.6% when CFS MC decreased from 5.5% to 3.0%. Chlorophyll content of oil increased from 200 ppm at 5.5% CFS MC to 260 ppm at 3.0% CFS MC. No differences in amounts of oil extracted, foots, and chlorophyll contents were observed between seeds with 9% and 12% initial moisture. Oil from 9% and 12% MC seeds had FFA contents of 3.8% and 4.2%, respectively, and remained at these levels for all CFS MC studied. Seeds with initial MC of 9% and final CFS MC of 4.8 % had P, Ca and Mg contents of 153, 40, and 64 ppm, respectively. P and Ca increased by 20% while Mg increased by 25% when the CFS MC was at 3%. Oils from 12% MC seeds had slightly lower levels of P, Ca and Mg contents.
