Technical Abstract: We are producing pectin-based matrices for the encapsulation of probiotic bacteria such as Bifidobacteria and Lactobacilli. These matrices are designed using our knowledge of pectin-based colon-specific drug delivery matrices, pectic oligosaccharides with prebiotic properties and the adherence of probiotic bacteria to different carbohydrate structures.
