Technical Abstract: USDA-ARS research is committed to developing solutions to agricultural problems in crop and animal productions, food safety, and value, and natural resources and sustainable agricultural systems. There are approximately 1200 ARS research projects divided among 22 National Programs (NP). The ARS Food Safety Program (NP 108) is divided into two major areas, Pathogens and Toxic Chemicals. The Pathogen component is sub-divided into pre-harvest and post-harvest food safety. These programs are focused on decreasing food-borne illness which may be acquired through ingestion or exposure of contaminated food stuffs. Specifically, scientists study how to reduce and/or prevent pathogens in the food supply during production, harvesting, processing, transportation, handling, and storage of food. The Toxic Chemical component is sub-divided into mycotoxins, drug residues and environmental contaminants, and toxic plants. Studies are designed to prevent contamination of food via toxic chemical exposure.
