Technical Abstract: Film formation from agricultural materials, such as proteins, results from the solvation of the agricultural component and plasticizer, usually in water, and the removal of the solvent, such as in a drying step. The chemical and physical changes that take place during film formation are unique for each material. Some may need to be heated to bring about chemical or physical change. Others demand a low temperature to avoid undesirable changes. Plasticizers such as glycerol, sucrose, and sorbitol are added to make the films flexible. The film components may need to be mixed in a specific order. This chapter will concentrate on the film formation accompanying the drying of the film solution.
