Technical Abstract: Epidemiologic evidence suggests consumption of selenium (Se) and/or broccoli protects against cancer and cardiovascular disease. Animal studies suggest that broccoli may improve antioxidant status and induce phase II proteins. The objective of this study was to determine if a daily intake of 9 or 90 g of regular or Se-enriched broccoli for 6 wks improved measures of Se, antioxidant status and clinical health (e.g. lipids, liver function and hematology). Thirty healthy men consumed 1 of 3 diets: 1) broccoli (0.03 ppm Se), 2) broccoli with 3 ppm added Se, and 3) Se-enriched broccoli (3 ppm Se). Broccoli in a ready-to-eat dish was consumed with self-selected diets; 9g broccoli/d for 6 wks and after a 2 wk washout period they consumed 90g broccoli/d for an additional 6 wks. These data suggest a novel benefit of broccoli consumption may be significant improvement of blood lipid status. Consumption of Se-enriched broccoli for 6 wks caused only a modest (12%) increase in plasma Se.
