Interpretive Summary:

Technical Abstract: Three important chemicals and an essential mineral (phytonutrients) for human health and well-being are ascorbic acid, beta carotene, 5-methyl-tetrahydrofolic acid (folic acid) and potassium. In this review article, preharvest factors of cultivar, fruit size, soil type, and year were profiled for their influence on the accumulation of these phytonutrients in fruits and vegetables.
