Title: REACTION OF ZEIN WITH SUITABLE REAGENTS TO INDUCE CROSS-LINKS

Technical Abstract: In order to reduce the impact of moisture on physical properties of articles based on zein, the use of various reagents to induce cross linking were evaluated on a torque rheometer. Di, tri and tetra carboxylic acids were added to zein at levels between 5 and 20%. With suitable amounts of these reagents in the presence of water as a plasticizer, cross-linking occurred as evidenced by the very large increase in viscosity. SDS-PAGE analysis showed higher molecular weight bands. When tri(ethylene glycol) alone was used as the plasticizer, the cross-linking reaction did not occur as readily. The impact these treatments have on physical properties was evaluated.
