Technical Abstract: Casein prepared using high pressure CO2 has unique physical properties. Laboratory cast films are barely water soluble, are slightly stronger and stiffer than Ca caseinate films plasticized with glycerol. A continuous process for these films is unknown. A semi-continuous pilot plant process was developed for these films. Ca caseinate/glycerol solutions wetted and spread on polyethylene or Mylar belts were readily removed after forming films. Adjusting the glycerol concentration, the process produced films with properties similar to those previously reported for a batch process. CO2 - casein was used in the same process with the same process parameters as used for Ca Caseinate. The film solutions processed similarly to Ca caseinate and the resultant films exhibited properties similar to laboratory cast CO2 - casein films. Non-fat dry milk was successfully substituted up to 20% for CO2-casein with little change in physical properties.
