Technical Abstract: Potato and other carbohydrate rich foods have recently received negative comments from certain popular diet proponents and some nutritionists. This increases the importance and presents an opportunity to take advantage of the full phytonutrient potential of potato by identifying germplasm that has particularly high levels of key vitamins and phytonutrients. Any potato variety exceptionally rich in phytonutrients may appeal to the public and be highly marketable.
