Technical Abstract: Fantesk**TM is a starch-oil composite obtained by a steam jet-cooking process. Over the years, various types of starches have been jet-cooked with a variety of blended and unblended oils to prepare Fantesk composites. The composite is water-dispersible and has been formulated into various food and non-food products. Fantesk composites have been investigated in a number of lubricant applications including: encapsulation of biocides for metalworking lubricants, encapsulation of lubricant formulations for oil field drilling mud, and preparation of solid lubricants for sheet metal forming. In spite of the importance of Fantesk in food and industrial applications, the interaction of starch and oil in Fantesk composites is not well understood. Current hypothesis is that the Fantesk composite comprises the oil phase encapsulated inside of a starch shell. However, recent studies on Fantesk solid lubricants indicate that the oil is also adsorbed on the starch surface and that the concentration of oil on the starch surface is a function of the oil composition in the Fantesk composite. In this paper, we discuss the application of boundary friction tests to probe into starch-oil interactions as well as into the relationship between "adsorbed" and "encapsulated" oil in Fantesk composites.
