Technical Abstract: This article summarizes the key elements pertinent to postharvest handling and storage of carrots. It provides guidelines on how to maintain postharvest quality by optimizing harvesting, postharvest handling, and storage conditions. Specifically, the recommendations include prompt washing and hydro-cooling to below 5 degrees C, high moisture content to prevent desiccation during storage, and avoiding exposure to ethylene etc. In addition, it also provides for processing and storage of fresh-cut carrots.
